I found this recipe online in allrecipes but I have altered it to make it work for Slimming World and guess what it’s syn free…
1 tsp ground cumin
1 tsp ground coriander
1 tsp coriander leaves
1 tsp paprika
1 tsp cayenne pepper
1 tsp tumeric
3 large chicken breasts cut into large chunks
1 large white onion
2 mince garlic gloves
1 tbspn minced ginger
Jalapeño’s (I used 1/4 of a jar) chopped up
7 vine tomatoes halved (average size of tomato)
3 fat free coconut yoghurts
Salt to season
In a bowl mix the chicken with the paprika, turmeric, cumin, coriander, cayenne pepper, and coriander leaves. In a frying pan spray quite a bit of the frylite, then you want to cook the chicken. Make sure you turn this and cook through.
Then in a pot again spray with frylite and cook the onions for a few minutes and then add the garlic, ginger, jalapeño and tomatoes. Cook for 5 mins and then add the coconut yoghurts and pinch of salt. Mix well let cook for a few more minutes.
I then added my chicken to the mix for 5 mins to let all the flavour mix. It was lovely.
I served mine with boiled Jersey potatoes and brocoli for extra speed.
It would also be lovely served with rice and I think it would complement even more if you squeezed some lime juice over the finished product but I had no limes to try this. This recipe does enough for 4 portions.
