Syn Free Caribbean Curry

About 5 years ago I went to a naming ceremony for my husbands friends beautiful baby girl. They had loads of amazing food there – a mixture of Nigerian and Jamaican delicacies. They gave us a tub to take away with us and it was amazing. Caribbean curry….. YUM!!!! I had to call for the recipe!!!!!

When I started Slimming World I loved this recipe even more as its SYN FREE and bloody tasty. 


Ingredients:

3 or 4 chicken breasts

1 potato

5 spring onions sliced

2 garlic gloves finely chopped

1 insch ginger finely chopped

3 tblspn Caribbean curry powder (I get mine from African food stores)

Chilli or chilli flakes

Lemon juice

Method:

Cut chicken into chunks mix with xurry powder, chilli, ginger, spring onions and lenon juice (enough to make the other ingredients like a paste on the chicken). Leave to marinade for about 30 minutes in the fridge. 

Then brown it off in a pan. Chop the potato into small pieces and add to the pan. Add a small amount of water into the pan, cover with a lid and cook on medium heat. 



Stir occassionally and if you need to add water. Bit by bit so you don’t flood it. 

This makes a great slow cooker recipe with beef or lamb (remove excess fat). If preparing in a slow cooker you will only need a dash of water.
