Sweet Potato Chicken Fajita Boats
Well this was a pleaser with the hubby and me….
I saw one of those recipe videos on facebook for this earlier and adapted it to suit my slimming world diet and me being me I just added some extra ingredients. It is very low syn.
Ingredients for fajita seasoning:
1 level tbspn ground cumin
1/2 tsp ground ginger
1 tbspn chilli powder
1 tbspn paprika
1 tsp ground white pepper
Zest of 1/2 lime
750g chicken (I used thighs you don’t have to)
2 sweet potatoes
1 red pepper
1 green pepper
1 large onion
3 tbspn tomato puree
Olive oil low calorie spray (Tesco one is 1/2 syn for 5 sprays)
Pierce and microwave the sweet potatoes till soft. Cut the potato in half and scoop out middle and put aside. Take the skins and spray with the low calorie oil. Add a sprinkle of the seasoning you make and rub into the skins. Then grate some of the lime zest onto them.
I sliced the peppers and onion you then want to put this in an oven tray along with the chicken (I kept them whole and removed all skin & fat) and spray with the oil and add the seasoning, rub it right in and then grate some lime zest over it and add the juice of 1/2 the lime.
The remaining zest and juice I added this to the remaining sweet potato I had scooped out. This was still quite under cooked so I added this in with the veg and chicken to cook.
Put this and the potato skins in the oven at 180° for about 20 mins. Till the chicken is cooked. Then using two forks pull the chicken apart (like you do with pulled pork, etc.), add the tomato puree and mix it all thoroughly.
Then scoop the mixture out and evenly put into the potato skin boats. Top with grated mozzarella and put back in the oven for 5 – 10mins to cook.
I served mine with some rice and my sweet potato guacamole and it was all really tasty….
