Slimming World Chicken Chasni…

This has fast become one of my favourite fakeaways – honestly it barely touches the sides.

There is quite a few recipes out there for this I have slightly  adapted it to make it the way I prefer. By using the below recipe you get more sauce and I don’t know about you but I love and need plenty sauce. I’m a saucy bitch.

This does make quite a lot – probably enough for 6-8 people depending on if your a greedy git like me.

Ingredients:

2 packs of skinless & boneless chicken thighs  (remove any fat on them)

Tikka seasoning

1 tblspn tumeric

1 tblspn chilli powder

1 tblspn curry powder (I have made it without this and really enjoyed it just the same)

2 tblspn mango powder

1 tblspn fresh chopped mint or mint sauce (if using fresh mint then add a tsp of sweetner)

2 tblspn of lemon juice

1 tblspn red food colour powder

500g passata

250g fat free yoghurt

1 large brown onion

Salt to season to taste

This is from me making it last night – I made double the recipe as I was making it for my taster also. There is also no curry powder in the above.

I cook my chicken separate in the oven seasoned with tikka spices and some red food colour  powder and sprayed with Frylite.


Chop one onion brown it off and add:
tumeric, chilli powder, curry powder, mango powder

Cook for a couple of minutes but keep stirring as it is quite a dry mixture and will easily clump, stick to the pan or burn.

Then add all of the below and give it a good stir. Turn the heat down and let this simmer while the rice and chicken are cooking.

1 tblspn fresh chopped mint or mint sauce (if using fresh mint then add a tsp of sweetner)

2 tblspn of lemon juice

1 tblspn red food colour powder

500g passata

250g fat free yoghurt

When the chicken is ready chop it up and add to the sauce along with any juice from the chicken.

Hey presto…

(You can get mango powder from Asian food stores or online) there is recipes online for this that use mango chutney but that will be higher in syns where as here you only syn the mint sauce or sweetener depending on what option you go for.

I promise this is divine….
