Salt & Chilli Chips
There is a lot of recipes for this online but I made a slimming world friendly version last night for the first time and by God they where just like the ones from the Chinese. So I felt like I had to share this….
500g white potatoes
half red bell pepper
half white onion
1 clove garlic
2 spring onions
1 red chilli (finger)
1 tsp ground white pepper
1/2 tsp salt
1/2 tsp Chinese five spice
chip your potatoes and par boil them for around 5 mins, drain them and place them in an oven proof tray sprayed with Fry lite. Put them in the oven (180 degrees) for 15 – 20 mins. Whilst they are cooking slice the onion, red pepper, spring onions, chilli and chop the garlic clove. Then in a small cup/ dish mix together the white pepper, salt and Chinese five spice.
When the chips are ready take them out and put them in a frying pan sprayed with more fry lite and add in the onion, red pepper, spring onions, chilli and garlic. Cook them off together and a minute before your ready to serve sprinkle over the white pepper, salt and Chinese five spice mix. You may not use all of it the mix, I didn’t but its put in a wee tub for the next load I make….
They are delicious and go well with a Slimming world fakeaway. I served these with chicken curry and boiled rice. The icing on the cake for these is they are syn free and packed with plenty super free veg!!!! In fact the whole dinner was….. yum yum.
